Zuppa Toscana!

I have never had this soup at Olive Garden (or anything else at Olive Garden in years), but supposedly it's pretty popular. I saw this recipe over at 365 Days of Crockpot, and I had to try it. This is in spite of the fact that I am not a sausage lover. Sausage for breakfast? Nope. Hate it. Sausage on a pizza? Once in awhile, but most of it gets picked off. Sausage in this soup? YES! It was delicious and easy to make. I made a few alterations to suit myself: I had fresh spinach (thanks to Bountiful Baskets) so I used that instead of kale. I also added about a 1/2 teaspoon of crushed red pepper flakes and left out the bacon. (Don't tell my boys the bacon is missing!)
