In other words, time is marching too fast for me lately, and I refuse to participate any longer. As if. :)

I know I've been MIA lately. My apologies. It's just that getting our son ready to leave on a two-year mission is time-consuming, nerve-wracking and crazy all at once!

Libby is a Birthday Girl today!

The baby of our family is NINE today!!

I can't believe she is growing up so fast! Here are 9 things I love about Libby:

1. She is so sweet to everyone.
2. She loves getting haircuts as much as I do.
3. Her tender little spirit.
4. Her ability to love.
5. All the little notes and pictures she writes and draws for everyone in the family.
6. She'll entertain herself for hours!
7. She is always willing to help others.
8. She's so cuddly. :)
9. She's very obedient!

Strawberry Lemonade Slush {a delicious way to cool down for your 4th!}


Here's a delicious way to cool down in this hot weather we're having....how hot are you? {We're actually a little cooler today at 97, but that's still hot enough for me!}

Strawberry Lemonade Slush
In a blender, add the following:
2 cups frozen strawberries
1 cup ice
1/2 c. water (add more as needed to your desired consistency)
1/2 c. sugar (adjust to your liking)
1/2 c. lemon juice

Blend on the smoothie setting until everything is well-combined. Makes about 4 servings.

A dessert for a HOT summer day--Strawberry Shortcake Trifle

Easiest, yummiest dessert ever...especially when it's 103 degrees outside!



Strawberry Shortcake Trifle
1. Buy an angel food cake. (In the interest of keeping the oven OFF!) Also buy a large container of frozen, sliced strawberries in sugar and one pint of whipping cream. Thaw the berries in the fridge overnight.
2. Cut the cake into cubes. Whip the cream with 1/3 c. powdered sugar and 1 t. vanilla.
3. Layer 1/3 of the cake cubes in the bottom of a trifle dish or large bowl.
4. Spoon 1/3 of the strawberries and syrup over the cake cubes.
5. Cover with 1/3 of the whipped cream.
6. Again, layer 1/3 of the cake, 1/3 of the berries, and 1/3 of the cream. Finish off with a final layer of cake, berries and cream.
7. Chill for 30 minutes to allow the cake to soak up some the strawberry syrup.
8. Serve and enjoy.
9. Try to resist having seconds. NO ONE here could resist. :)
