Peanut Butter Fingers
adapted from Clawson Live

1/3 c. sugar
1/2 c. brown sugar
1 cube butter
1 egg
1/2 c. chunky peanut butter
1/2 t. baking soda
1/4 t. sea salt
1 1/2 t. vanilla
1 c. flour
1 c. quick-cooking oats
1 1/4 c. creamy peanut butter
1 container chocolate fudge frosting

Preheat oven to 325. Spray a 9x13 pan with non-stick cooking spray. Combine flour, soda and salt in a bowl and set aside. Cream sugars and butter til smooth, then add egg, vanilla and crunchy peanut butter.  Beat until fluffy. Slowly stir in flour mixture til combined. Stir in oats. Spread mixture evenly in bottom of 9x13 pan. Bake approximately 12-15 minutes, until puffed and just turning golden brown. Remove from oven and cool. Meanwhile, beat 1 1/4 cup creamy peanut butter on high for 5-6 minutes. It will be very light and fluffy. Spread over cooled crust. Using about 2/3 of the chocolate fudge frosting, put it in a microwave safe bowl and heat for 20-30 seconds on high. Stir and pour slowly over peanut butter layer, spreading lightly as needed to cover. Refrigerate until set and chilled. Cut into bars. Makes approximately 2 dozen.
